The quality-oriented work continues in a modern cellar building near Bernkastel. Gentle handling of the grapes and young wines is of utmost importance. The wines are matured quite carefully, so that their typical notes come to the fore. The grapes from different sites are fermented separately in small stainless steel tanks. In order to keep the number of different wines low, they are partly blended later on. The fermentation takes place at fixed low temperatures, so as to obtain the complex diversity of flavours and the vitality of the wines. The Riesling collection is very diversified.
